DAY 5: Soft Tacos, Spanish Rice & Seasoned Refried Beans

Soft Tacos

  • ½ lb ground beef

  • 2 cloves garlic, crushed

  • ¼ tsp chili powder

  • ¼ tsp ground cumin

  • 1 Tbsp lime juice

  • Veggie mixture reserved from Pasta Primavera

  • 4 flour tortillas

  • Cheddar cheese

  • Sour cream

  • Salsa

Instructions

Brown ground beef. Add garlic, spices, lime juice and veggies. Cook until heated through. Wrap in flour tortillas, with cheese, sour cream and salsa.

Spanish Rice

  • 2¼ cups cooked rice, reserved from Steamed Rice

  • 4 slices bacon

  • ½ onion, chopped

  • ½ tsp sea salt

  • 1/8 tsp red pepper flakes

  • 1-14.5 oz can diced tomatoes

Instructions

Fry bacon until crisp; crumble and set aside. Sauté onion in bacon fat until tender. Add rice; fry for a few minutes, stirring occasionally. Add salt, red pepper flakes and tomatoes. Cook over med-low heat, uncovered, until rice reaches desired finish.

Seasoned Refried Beans

  • 1 can refried beans

  • ½ tsp chili powder

  • ½ tsp cumin

  • ½ tsp salt

  • ¼ cup salsa

Instructions

Empty beans into small saucepan. Add remaining ingredients and simmer for 15-20 minutes.
