DAY 5: Spicy Yamcakes with Ham, Stewed Apples & Broccoli

Spicy Yamcakes

  • ¾ lb garnet yams, grated

  • ½ bunch green onions, chopped

  • ¼ cup garbanzo flour

  • 1 egg

  • ½ tsp sea salt

  • ¼ tsp ground black pepper

  • 1 tsp chili powder

  • 3 Tbsp olive oil, divided

Instructions

Rinse grated yams with cold water; drain well. Combine remaining ingredients, except oil. Add yams and stir well. Heat a skillet over medium heat. Add oil to coat. Put ½ cup yam mixture into skillet and flatten into a patty. Repeat to fill skillet with patties. Cook 4-5 minutes, until edges start to brown. Turn and cook another 4-5 minutes, until golden brown. Keep warm in oven while cooking the remaining batter. Serve with Stewed Apples.

 

 

 

Stewed Apples

  • 2 apples

  • 2 Tbsp maple syrup

  • Juice from 1 orange

  • ¼ tsp cinnamon

  • Pinch of sea salt

  • Pinch of nutmeg

Instructions

Core and slice apples.  Add remaining ingredients and simmer 15-20 minutes or until apples are tender.

Ham, Broccoli

Instructions

To heat ham, place in a small amount of water in skillet and heat gently until warm.

Reheat broccoli for a short time to avoid cooking it further.
