DAY 1: Tuna Patties, Roasted Cabbage & Delicata Slices

Tuna Patties

  • 1 can tuna

  • 1 egg

  • ¼ tsp sea salt

  • 1/8 tsp pepper

  • ¼ cup pancake mix

  • ½ onion, finely chopped

  • ¼ green pepper, finely chopped

  • ½ stalk celery, finely chopped

  • 2 Tbsp olive oil

  • Lemon wedges

  • Yumm! Sauce, optional

Instructions

Drain tuna. Mix all ingredients together, except lemon wedges. Form 3 Tbsp at a time into patties. Heat olive oil in a skillet, 1 Tbsp at a time. Fry cakes about 10-15 minutes, turning halfway through to brown both sides. Serve hot with lemon wedges or Yumm! Sauce.

Roasted Cabbage

  • ½ head cabbage

  • Sea salt & pepper

  • Olive oil

Instructions

Slice cabbage into ¼” thick slices and place on baking sheet. Spray with olive oil and sprinkle with salt and pepper.  Turn over and do the same on the second side. Roast at 400°F for 20-25 minutes, until desired finish is reached.

Delicata Slices

Instructions

To prepare delicata, slice squash in half lengthwise and scoop out seeds. Slice each half into ½” pieces. Sauté in 1-2 Tbsp olive oil, add salt & pepper to taste. Turn over when golden and brown 2nd side. Save for later: ½ head cabbage and 2 delicata squash
