Leftover Turkey Curry

A spicy and unique option for leftover turkey after Thanksgiving. Enjoy with a variety of creative toppings.

  • 3 Tbsp butter

  • ¼ cup minced onion

  • 1 ½ tsp curry powder

  • 3 Tbsp flour

  • ¼ tsp salt

  • 1/8 tsp ground ginger

  • 1 cup chicken broth

  • 1 cup milk

  • 2 cups diced cooked turkey

  • ½ tsp lemon juice

  • Rice

  • Optional toppings: raisins, salted almonds, salted peanuts, pineapple pieces, hard cooked eggs, sliced avocado, crisp bacon bits

Instructions

1. Melt butter over low heat in large saucepan.
2. Sauté onion until translucent. Add curry powder and sauté 1 minute.
3. Mix flour and seasonings and blend into onion mixture.
4. Cook over low heat until smooth and bubbly. Remove from heat.
5. Heat broth and milk in microwave; stir into mixture in saucepan.
6. Bring to a boil, stirring constantly. Boil 1 minute.
7. Add turkey and lemon juice. Heat through and serve over rice.
8. Add condiments as topping, as desired.
