DAY 5: Tuscan Pasta, Salad Nicoise & Apple Slices
Tuscan Pasta
Instructions
Bring a large pot of water to a boil; add pasta and ½ tsp salt. Boil until pasta is al dente. Add sundried tomatoes to pot when there are about 5 minutes of cook time remaining. Drain, rinse, and set aside. Heat oil in a skillet; add onion and sauté until softened. Add kale, salt & pepper. Sauté until kale is slightly wilted. Add sun-dried tomatoes and nutritional yeast; cook 2-3 minutes. Add beans, then pasta, and stir. Serve topped with grated Parmesan. Heat and serve with apple slices and Salad Nicoise as sides.
