Veggie Lettuce Wraps

Ingredients:

  • 2 cups cooked brown rice
  • 1 can pinto beans, undrained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh oregano
  • 1 tsp dried thyme
  • ½ tsp dried basil
  • ½ tsp dried marjoram
  • ½ tsp chili powder
  • ½ tsp salt
  • 2 carrots, thinly sliced
  • 3 radishes, thinly sliced
  • 2 green onions, sliced
  • Salsa to taste
  • Romaine lettuce, for making wraps

Instructions:

Place beans, with their juice, in a saucepan.  Add onion and seasonings. Simmer 6-8 minutes, until sauce is thickened. Divide ingredients between lettuce leaves, add salsa as desired, roll up lettuce leaf and serve.
