Cheddar Scallion Scones

Sharp cheddar and fresh scallions team up for a delicious, savory breakfast. Be sure to choose a sharp, aged cheddar for the fullest punch of delicious cheddar flavor. These scones are great alongside farm fresh eggs or can also be a great choice for accompanying a dinner of soup, stew, or chili.

  • 2 Tbs. cold butter
  • ¾ cup flour
  • 1 ½ tsp. baking powder
  • ½ tsp. salt
  • 1 tsp. dried mustard
  • ¼ cup grated cheddar
  • 2 scallions, finely sliced white & green part
  • 1/3 – 1/2 cup milk

Instructions:

Preheat oven to 350°. Mix the flour, baking powder and salt together. Cut the butter into the flour until it has the consistency of cornmeal. Stir in cheese & scallions. Add the smaller amount of milk and stir; add more milk if needed to get a firm but slightly wet dough. Knead a bit, then divide into six equal pieces. Form dough balls and flatten slightly to form biscuit shape. Place on an ungreased cookie sheet. Bake about 12 minutes.
