Chopped Apple Cake

Celebrate the arrival of fall with this delicious apple cake! This simple sheet cake is completely dairy free and uses sunflower oil rather than butter. Soft, sweet apple chunks dot a moist, crumbly cake with cinnamon, sugar, nuts, and raisins. Try one of many excellent locally grown apple varieties for this delicious family treat.

  • 4 cups apples, peeled & cut into ½” dice
  • 2 cups sugar
  • ½ cup safflower oil
  • 2 eggs
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 2 cups flour
  • 1 cup nuts
  • 1 cup raisins

Instructions:

Mix apples, sugar, and oil. Stir together. Let sit at room temperature, stirring occasionally until sugar has dissolved and juice has formed. Add remaining ingredients and mix by hand until combined. Pour into greased and floured 9 x 13 glass baking dish. Bake at 350º for 55 minutes. Dust with powdered sugar when cool. Serve topped with whipped cream or ice cream.
