Lemon Herb Chicken Thighs
Gourmet flavors that fit the budget! Chicken thighs are one of the lowest priced chicken cuts and make a simple and delicious option for grilling. The compact shape is easy to manage on the grill and the higher fat content in this cut keeps the meat from drying out. Lemon and herbs impart a lovely, bright flavor–a great recipe for summer grilling!
- Juice and zest of 4 lemons, plus 2 whole lemons
- 5 sprigs fresh rosemary, chopped
- 5 sprigs fresh sage, chopped
- 3 cloves garlic, chopped
- ½ tsp red chili flakes
- ½ cup olive oil plus more for drizzling
- 10 boneless, skinless chicken thighs
- Sea salt
Instructions:
In a bowl whisk together a marinade of the lemon juice & zest, herbs, garlic, chili flakes & ½ cup olive oil. Work marinade into chicken. Cover & chill overnight. Preheat grill to medium high. Remove chicken from marinade. Season generously with salt and drizzle with fresh olive oil. Cut 2 lemons in half; cut tips off ends. Place chicken and lemons (flesh side down) on grill. Cook 8 minutes. Turn chicken & lemons; grill 5 minutes. Check chicken for doneness. Serve with grilled lemons
