Macaroni and Cheese
The ultimate classic comfort food. This recipe calls for a blend of cheddar and pepper jack cheeses, but really you can feel empowered to try your own mix of cheese. Some delicious cheese choices: asiago, jarlsberg, or smoked gouda. Other delicious add-ins: tuna, bacon, peas, steamed broccoli, or kale. Also consider topping with a sprinkle of bread crumbs and some additional grated cheese before baking.
- 12 oz. elbow macaroni
- ¼ cup butter
- ¼ cup flour
- ¼ tsp dry mustard
- 1 tsp salt
- 1/8 tsp pepper
- 2 cups milk
- 1 cup (8 oz) cheddar cheese, grated
- 1 cup (8 oz) pepper jack cheese, grated
Instructions:
Cook macaroni al dente; drain. Melt butter; remove from heat. Stir in flour, mustard, salt & pepper. Gradually stir in milk. Bring to boil, stirring frequently. Simmer one minute. Remove from heat. Stir in cheese and macaroni. Pour into a casserole dish. Bake at 375°F for 15-20 minutes.
