DAY 6: Chicken and Rice Dish, Green Salad

Chicken and Rice Dish

  • 3 Tbsp balsamic vinegar

  • 1 Tbsp tamari

  • 1 clove garlic, pressed

  • ¼ cup olive oil

  • 2 cups rice set aside from Veggie Burgers

  • 1 can green beans, drained

  • 3 pieces cooked chicken breast set aside from Herbed Baked Chicken

  • ½ cup pecans, toasted

  • ¼ cup dried cranberries

Instructions

To toast pecans, place nuts in a single layer on a baking sheet. Bake at 350°F for 10-15 minutes or until toasted. Watch carefully so they don’t burn.

Place vinegar, tamari and garlic in a bowl.  Whisk in olive oil a little at a time to form a dressing.  Mix rice, green beans, chicken, pecans and cranberries.  Add dressing a little at a time evenly coated.

Serve with green salad.
