Linguiça & Veggie Skillet

This savory and hearty stew makes a great warming meal. Have it alongside a nice piece of crusty bread to make sure you get all of the goodness.

  • 8 oz. Linguiça sausage

  • ½ medium onion, chopped

  • 4 cloves garlic, diced

  • ½ tsp sea salt

  • Black pepper to taste

  • 1 cup Chardonnay

  • 1 cup chicken broth

  • 2 carrots, peeled and sliced

  • 1 red bell pepper, chopped

  • ¼ tsp red pepper flakes

  • 1/8 tsp dried thyme

  • 1 bay leaf

  • 15oz can diced tomatoes

  • 15-oz can Cannellini beans, drained and rinsed

  • 4 cups kale, chopped

  • 1 Tbsp fresh lemon juice

Instructions

1. Crumble and cook sausage until done, about 5 minutes.
2. Add onion and garlic; cook until onion softens, about 5 minutes. Drain grease.
3. Add wine, broth, spices, beans, and all veggies but the kale.
4. Bring to a boil, reduce heat and simmer gently 10 minutes or until carrot is tender-crisp.
6. Add kale, cover and cook 2-3 minutes or until kale is wilted to your desired finish.
7. Drain liquid if desired. Drizzle with lemon juice and stir.
