Spring Delights Salad
Strawberries, spring greens and a hint of mint make the perfect spring salad. Fresh, crisp flavors accompanied by a sweet-tangy dressing go great with a slice of crusty bread, and/or a nourishing bowl of soup. You’ll find fresh strawberries are in season in the produce department, and depending on weather and availability, you may find locally grown ones! We also carry a variety of spring greens, including lovely blends from the new Commonplace Farm in Corvallis.
Salad Ingredients:
- 3 sprigs mint
- 4 cups Mesclun mix
- 2 cups spinach leaves
- 1 pint strawberries, halves
- ½ cup walnuts
Dressing Ingredients:
- ½ cup sugar
- 2 Tbsp sesame seeds
- 1 Tbsp poppy seeds
- 1 ½ tsp minced onion
- ¼ tsp Worcestershire sauce (vegan available)
- ¼ tsp paprika
- ½ cup olive oil
- ¼ cup apple cider vinegar
Instructions:
Pick leaves off mint sprigs and chop. Place Mesclun mix, spinach, strawberries, walnuts, and mint in salad bowl and toss. Place sugar, seeds, onion, Worcestershire, and paprika in blender. With blender running, add oil and vinegar in slow steady stream until well mixed and thickened. Dress salad, toss, and serve.
